Our Ingredients
At Blue Spruce Chocolates we are committed to using ethically sourced, Direct Trade or Fair Trade beans. We use only four ingredients for our bars: cacao, vanilla, sugars and milks (dairy and non-dairy). Of course, if we add nuts and fruits on some of our bars and barks, we note that on the bar ingredients.
Our Beans
Our beans are Direct Trade or Fair Trade and organic or from farms where the organic certification is in progress.
Our sugars are organic (no bone char) and minimally processed. We use a variety of milks including cow, coconut, JOI cashew, and other milks depending on the bar.
We source our vanilla from Origin Vanilla and Chocolates in Fort Morgan, Colorado. Origin has a mission to move forward the ethical, direct sourcing of vanilla. Real vanilla is simply irreplaceable, and Origin is dedicated to bringing a new era into the vanilla business.

Our Vision
Blue Spruce Chocolates was born in a small cabin overlooking Bear Creek in the foothills of Colorado. Inspired by several trips to Belize, Mark and Yuri were excited to create a line of the highest quality chocolates derived from ethically sourced ingredients with an eye on health.
Our Chocolates
Our vegan-friendly, no and low-sugar, and keto friendly bars reflect our focus on creating scrumptious chocolate bars that are guilt-free and therefore so much more enjoyable!! Hand-made bean-to-bar chocolates created daily from the highest quality ingredients obtained through Fair or Direct Trade with the farmers. Our chocolates are stone-ground for a minimum of 48 hours from Peruvian, Ecuadorian and Madagascar beans and the finest vanillas and minimally processed vegan sugars - Yuri and Mark
As a new chocolate maker, we have contacted chocolate lovers and chocolate professionals to taste and review our chocolates. In addition, we are scheduling tasting and pop-ups for locals here in Colorado to sample and purchase our chocolates. Our Dark Chocolates
Our dark chocolates are made from Ecuadorian, Peruvian and Madagascar beans as detailed in the 'Our beans' section. Our dark chocolates contain only three ingredients: cocoa, vanilla and sugar. That's it. All of our dark chocolates are 72% chocolate.
Our Milk Chocolates
Lynne's Light (40% milk chocolate) is a light, creamy chocolate with a cold snap that melts on your tongue.
Stuart's Smile (60% milk chocolate) is a hearty, fruity bar that explodes with a variety of flavors that change over time.
Our Dairy-free Chocolates
FREE the cows!
King Coconut (50% chocolate with coconut milk and crisped organic coconut flakes) uses the Ecuadorian Esmeraldas bean with certified organic coconut milk. This is a fine, extra-smooth vegan bar with reduced sugar (less than 25%).
Jumping for Joi (50% chocolate with cashew milk) uses the Peruvian Catongo bean combined with organic cashew JOI to make a fine, nutty vegan bar. The blond Peruvian bean adds a light color to the bar. The natural sweetness of cashew allows us to produce a bar with less than 25% sugar!
